Alfalfa to feed cheese-producing cows is a water-intensive crop

New York – Groundwater is being depleted in the United States at a rapid rate, and one of the key reasons cited – according to the New York Times – is the country’s love of pizza. The newspaper suggests that Americans are eating twice as much cheese as they did in the 1980s which means that water-intensive alfalfa is needed to feed the cows which produce cheese. Eighty per cent of Idaho’s groundwater monitoring wells – the state that produces the most alfalfa – have experienced significant decreases over the past 40-plus years. Newser report | READ MORE
